Discover The Fast & Easy Ways to Make Basic Bread Dough by Mary Walsh

This recipe is for simple bread dough which has a delightful buttery flavor. It can be used to also make herbed cheese bread and dinner rolls.
Ingredients:

1 package of active dry yeast

2.5 – 3 c of flour (all-purpose)

1/4 c of water (warm)

1 tsp of salt

1/2 c of milk; warmed

2 tbsps of sugar

1/4 c of butter-flavored Shortening (Crisco brand)

1 egg

How to Cook:

1. Combine water and yeast inside a big bowl. Add in 1.5 c of flour, milk, salt, sugar, shortening and egg to this mixture. Beat using your electric mixer at low settings for about 3 mins. Stir in remainder of your flour for a softer dough.

2. Get a board and sprinkle it with enough flour. Put your dough on it and knead for about five minutes. Make sure that dough becomes smooth & elastic enough. While kneading your dough, continue adding flour onto your board from time to time so that it will make your kneading easier. Shape your dough into 1 big ball and put it inside a greased glass bowl. Turn your dough over and cover it using any clean towel. Let dough double in its size (1 hr.).
3. Take your dough from the bowl, punch it down then form in any shape you like. If you’re planning to prepare dinner rolls, then don’t knead your dough.

If you’re just making your basic bread loaf: Shape your dough accordingly and place inside a greased loaf pan measuring 9X5X3. Cover the pan & let dough double in its size. Bake inside your oven at about 375 deg. F until it becomes light brown (30-45 mins). This produces one loaf.
If you’re making herbed cheese bread: On top of your ingredients for basic bread dough, you need to add one to two teaspoons of dill weed or basil (dried) & 1.5 cup of grated cheese (Cheddar). Mix these ingredients into your dough, knead & shape to a circular shape.
Next, place dough inside a 1-qt. round, well-greased casserole deep dish. Then, turn your dough over and make an X mark at the very middle of your dough’s top portion using your knife. Cover dough then allow it to rise just until it doubles its size. Preheat the oven at 350 degrees and bake the dough for 40 – 45 mins.
If you’re making dinner rolls: Slice dough equally into 20 pieces then knead into small balls. Next, place dough pieces inside a greased 13X9X2 loaf pan and cover using any clean towel.
When your dough is already double its size, bake inside your preheated oven, at around 400 deg. F. Put Crisco on top of your rolls before placing it inside the oven. Keep rolls inside your oven so as to keep them warm for about 7-10 mins before serving

People often think they are doing something healthy for themselves by switching their white bread for whole wheat bread. Although this is a better option than white, whole wheat bread can still be preventing you from losing your unwanted weight.

I am not a big fan of bread or bread type products. Actually, I think most people could feel a thousand times better if they stopped eating so much bread every single day. Toast for breakfast, sandwich for lunch, bread basket at dinner…we could feed a small village with the amount of bread I see some people consuming in one day (or several villages depending on who you’re talking about).

No, I am not saying to never have bread ever again (Hey, its life, you gotta enjoy it, right?). What I am saying is that 4-5 servings of some kind of bread type product every day is making thousands of people gain weight, preventing them from losing their unwanted weight and worst of all, bringing about diseases like Type 2 Diabetes and Heart Disease.

I don’t eat very much bread at all and I really don’t even miss it. I guess I have just come to enjoy all the other delicious food I eat each day that I don’t even feel bread is missing from my meal plans.

Here are my “bread free” strategies and exactly how you can lower your own bread intake each day:

1. When you think of breakfast, don’t automatically think toast, bagels, or a roll. A couple of hard boiled eggs over sliced tomatoes is delicious. You can also make a quick batch of oatmeal and add walnuts and berries. How about cottage cheese and pineapple? The breakfast options are endless.

2. Pack snack foods and take them with you to work. In less than 2 minutes, I can throw natural peanut butter, raw almonds, dried fruit (no sugar added), an apple or banana and baby carrots all in a bag and be out the door. Taking these food items to work with you will help you stay away from the employee room bagels or donuts. (Don’t even get me started on how evil donuts are). Slap some peanut butter on an apple and munch away at that, all while making fun of the people eating donuts (Just Kidding, that’s not nice.)

3. Don’t depend on sandwiches as lunch every day. How about some salmon, broccoli and brown rice? Leftover chicken from last night and a sweet potato? Imagine that lunch is another version of dinner and not just a mid day sandwich inhaling contest.

4. Make “the bread basket” a once-in-while experience. You really do not need to be serving a bread basket for dinner at home if you are offering healthy carbohydrate choices like salad, cooked vegetables, brown rice, millet, or quinoa.

5. Oh, and how could I forget? Don’t think that eating “100% Whole Wheat” is any better. It is still refined flour (maybe just not bleached) and a huge contributor to weight gain. I could go on and on about this but I have covered all the details about how detrimental wheat products are to your weight loss efforts in Chapter 9 of The Diet Solution Program.

10 Steps To Making Bread In A Bread Machine

If you don’t own a bread machine you might be wondering if it requires a lot of effort. What I’ve done is put together 10 easy steps to show you a typical experience baking bread using a bread maker. Hopefully this gives you a feel for what you’ll to be doing once you get yourself one.

1. Wash your hands

The first thing you want to do is wash your hands and clean your area. You don’t want to make yourself sick, and you don’t want undesirable substances (hair, other food, etc) in your bread.

2. Get out your measuring spoons, cups, etc.

Its best to prepare before you get started. Get out your measuring cup and a measuring tablespoon. Have all these clean and available to you to prepare ingredients.

3. Prepare your ingredients

It’s best to have everything measured before you start dumping items into the bread machine. Now some people just do this as they go along, just like with any other recipe, so this is entirely up to you.

4. Wipe clean inside of bread pan

You want to wipe clean the inside of the bread pan. You might have dust or old bread material from a previous baking experience. Just take a wet cloth or paper towel and wipe it clean.

5. Place liquids in first

You can use whatever water you want, but for the best tasting bread I’d recommend using purified, bottled, or filtered water. Tap water often contains chlorine, and other chemicals which could influence the taste of the bread. This is of course depended on thoughts on purified water but it does make a difference.

You want to also place eggs, melted butter, or whatever other liquids you want to use. In terms of butter make sure its cooled before you place in the pan to avoid affecting the yeast.

6. Place dry ingredients into pan

Now you want to place the dry ingredients in the pan. If you already have everything measured out in bowls this should be an easy step. Just put everything in one at a time. In regards to fruit, nuts and grains, many bread machines have timers to tell you when it’s appropriate to add them in. If yours does not you want to wait until the dough has formed before you add these ingredients.

7. Insert yeast

Next you want to add the yeast. Make sure the yeast does not get wet before it’s added or you will waste the batch. One bread maker that handles yeast differently is the Panasonic SD-YD250. This bread machine actually has a yeast dispenser which drops the yeast into the batch at the perfect time. Unfortunately most models don’t have this feature so you will have to drop the yeast right after the dry ingredients.

8. Place pan inside of machine

Nest you want to place the pan inside the machine. Make sure it’s secure and then shut the lid.

9. Set the Timer and bake the bread

Once the lid is closed plug in the bread machine if its not already plugged in and turn on the timer or select a program/cycle. The many options depends on what bread machine you have, what type of bread you want to make, and if you are using a custom program. Now your ready to bake!

10. Remove bread from bread maker and enjoy

Once bread has finished baking, let the machine sit for about an hour to cool down then open the lid. Take the pan out and attempt to slide the bread out into a plate. Slice the bread and use saran wrap to keep it fresh. Since bread machine bread has no preservatives it tends to go bad sooner so its best to either eat it within 3-4 days or freeze the bread.

After taking a look a look at the steps involved you can see how accessible it is to make bread using a bread machine. It basically comes down to: cleaning, getting out measuring tools, placing ingredients inside the pan, dumping in the ingredients, baking, and removing the bread.

Chilli, Bacon and Onion Bread by Real Food Direct

Serve this delicious bread with cheese and soups or use it to turn beans on toast into a gourmet experience.

* For best results use Traditional Dried Active Yeast if making the loaf in a bread maker and Fast Action Dried Yeast if making by hand.

Ingredients

* 1 medium onion, finely chopped

* 2 rashers smoked back bacon

* 1 1/2tsp/7.5mlsp dried yeast*

* 6floz/175ml water

* 1tsp/5ml sugar

* 6oz/175g strong brown flour

* 41/2oz/125g strong white flour

* 3oz/75g Munchy Seeds Chilli Mix (or another Mix if you prefer)

To bake in a bread maker

1. Trim the rind and fat from the bacon keeping it in one long strip, chop the bacon. Put the fatty rinds into a pan with the onions. Cover and cook over a very low heat for 5 minutes. Discard the rinds, and add the chopped bacon. Cover and cook for 5 minutes. Leave to cool.

2. Meanwhile stir the yeast, water and sugar together. Leave for 10 minutes.

3. Put all ingredients into the bread maker and set to mix and cook a 1.5lb/675g loaf immediately (do not use the delay facility). Remove cooked loaf from pan and cool.

To bake in an oven

At step 2 stir all ingredients together (do not mix the fast action yeast with the water first) and knead on a lightly floured surface for 10 minutes. Put into a covered bowl and leave in a warm place until doubled in size (approx 1 hour).

Knead for 5 minutes. Shape into an 8in/20cm round and put onto a floured baking sheet. Cover loosely with oiled cling film and leave in a warm place to rise until doubled in size. Bake at 210C/425F Mark 7 for 15-20 minutes or until cooked through, (the underside of the loaf will sound hollow when tapped). Cool on a wire rack.
