Chocolate Oatmeal Cookies

Prep: 10 min, Cook: 10 min.

* 3/4 lb. semisweet chocolate chips

* 1/2 cup soft unsalted butter

* 1 egg

* 1/2 cup sugar

* 1/4 tsp. vanilla extract

* 3/4 cup all purpose flour

* 1/4 tsp. baking soda

* 1 tsp. baking powder

* 3/4 cup quick or old fashioned oats, uncooked

* 1/4 tsp. salt (optional)

Oven should be preheated to 375°F. Separate 1 cup chocolate chips from the rest and melt this in a saucepan over low heat. Set aside.

Beat sugar and butter together in a bowl until smooth and fluffy. Add the melted chocolate, vanilla, and egg.

Remaining ingredients should be combined in another bowl. Stir in the remaining chocolate chips and the chocolate mixture made previously.

Place rounded tablespoonfuls on an ungreased cookie sheet, bake 8-10 minutes as needed, then cool 1 minute on the cookie sheet before removing cookies to a wire cooling rack.

To freeze cookies, cool rapidly to retain freshness. All dairy and egg-based foods should be cooled in a refrigerator. Place the single-serving amounts in freezer-proof containers and seal tightly. If aluminum foil is preferred, wrap and fold edges to seal securely and place on a flat surface to prevent cookies from becoming misshapen.

Dried marjoram

Dried basil

Dried oregano

Salt

Drop tomatoes into boiling water, a few at a time. Let the water return to a boil, then remove the tomatoes and drain. Peel and chop.

Cook the onion, celery, and carrots in the olive oil, in a large covered saucepan, over medium-low heat for about 15 minutes, stirring a few times. Uncover and stir, over the heat, for 5 to 10 minutes more, or until the vegetables are very soft and lightly gold.

Add the tomatoes, sugar and pepper and simmer gently, covered, for 15 minutes.

Puree the sauce through the medium disc of food mill. Add the optional seasoning and cook at a bare simmer until a desirable consistency is reached, about 20 minutes, stirring often. Add salt to taste. You can add a little hot sauce to add a little more kick.

If you prefer a smooth sauce, work the sauce through the fine disc of a food mill.

Cool the marinara and refrigerate it. It will keep, refrigerated, for about a week, or for several months if frozen.

If you would like to serve fresh homemade crescent rolls for a special dinner or family get-together, this recipe takes only 2 hours from start to finish.

~ 2 packages of dry yeast (or 4 teaspoons bulk yeast)

~ 1 cup warm water

~ 1 cup buttermilk (or 1 cup milk with 1 tablespoon of lemon juice added)

~ 1/2 cup sour cream (use light sour cream, if you like)

~ 1 stick butter (or margarine) softened (if you want a lighter version of dinner rolls, use a half stick)

~ 1/3 cup sugar

~ 1 teaspoon salt

~ 6-7 cups flour

Dissolve the yeast in the warm water. Add buttermilk, sour cream, butter (or margarine), sugar, salt and 2 cups of flour. Use an electric mixer or a wire wisk and blend for several minutes. Add the remaining flour. Knead for several minutes. Let the dough rest for 20 minutes.

To make the crescent rolls: divide the dough in half. Roll each half into a 12-inch circle (mine usually ends up being more of rectangle than a circle, but it works, so who cares?).

Spread soft butter onto the circle of dough. Cut the circle in half. Cut each half into quarters. Then cut each quarter into three pieces (as if you are cutting a pie).

Roll up each piece of dough, beginning with the wide end. Place on a greased cookie sheet with the “point” underneath. Let rise in a warm place for 45 minutes before baking.

Bake at 350 for 20 to 25 minutes or until golden brown. Allow to cool for 10 minutes and remove from the cookie sheet.

This recipe makes 2 dozen crescent rolls. Total time (including time to bake) is about 2 hours.

3/4 c of Nutella

1 c of choco chips

1 c of nuts, chopped & toasted

1 c of small-sized marshmallows

Directions:

Put cereal into a large bowl then set aside. Next, in your small-sized saucepan on low flame or inside a medium microwave safe bowl, melt Nutella and choco chips. Stir continuously so that texture will be creamy.
