African Groundnut Stew by Titilayo Ajumobi

Ingredients

Beef, mutton, chicken, pork ,turkey or fish

1 tbsp vegetable oil

onion, peppers, tomatoes(blended into paste)

2 cups of raw groundnuts

1 tsp dried ginger

1 medium sized Onion(chopped)

Salt to taste

Seasoning (knorr chicken, curry, thyme and white pepper)

Method:

You may decide to use anyone or all of the meat types. Cut the fish, beef, mutton, chicken, turkey or pork into servable sizes. Rinse properly and pour the meat in a pot, add some water, chopped onions, salt and seasoning and bring to boil. Stir repeatedly and allow it to boil for 45 minutes then separate the meat from the meat stock and pour the meat stock into a container. Blend the raw groundnut and set aside. Pour the vegetable oil into the pot, when it becomes hot, pour the blended paste into the oil and fry for 10 minutes, then pour the blended groundnut into it as well as the meat stock and stir properly, then pour the boiled meat (and if you are the type that prefers fish, you could use fish alone) and the dried ginger into the pot, add some salt and seasoning and allow it to cook for another 10minutes. Groundnut stew can be served over eba, pounded yam, amala, rice, yam or any meal you choose to eat it with.

To prepare eba, pounded yam or amala which are widely eaten in Africa is as easy as walking into any shop that sells African foods, buy the gari which is used in making eba, for pounded yam, buy the poundo yam and for amala, buy elubo. Pour some water in a pot and bring to boil. Measure 4 cups of either gari, poundo yam or elubo into the pot and stir until it becomes smooth. Pour a little water into the pot, cover the pot with its lid for 2minutes, open the lid and turn the content of the pot repeated until it is properly cooked, then serve the eba, pounded yam or amala with the groundnut stew. This serves 4 people.

First, let me put this out there. I am using the word vegan to illustrate a point. I have more of a veganesque diet. Something like 95% vegan. I eat fish about once every two weeks. May have a milkshake or “real” chocolate every once in a while. Some of the faux meats I eat may have some milk ingredients (though really nothing significant). Basically, I’m not one of them strict vegans who frown upon anybody touching animal products.

Now that I got that out of the way…..

My family, when I was growing up, consumed the average “Black” Standard American Diet. Fried chicken, pork chops, fried fish, pig’s feet, chitterlings and so on. There was no meal where meat (including fish & chicken) was not present. This is not rare in the U.S. so this is not hard to believe. I just want to show how my view is not a result of upbringing but just a simple practice of looking, listening and observing. Or paying attention to nature and its laws.

Why do I subscribe to a vegan diet? A better question would be “why not?” I have molars that are flat. Looking at the meat-eating animals, it’s hard not to notice their very sharp teeth. Maybe they have those teeth so they can rip and tear into flesh. They also don’t chew they way I do. They chomp, rip and tear while I am more of a grinder. Actually, I eat my food like a horse. Bite then grind. Stallions even have incisors. Do horses eat meat? It easy to see that my teeth are better built for chewing than ripping flesh.

I always ate my meats cooked. But, it’s obvious that the carnivorous animals eat their meats raw. I’m certainly not planning on capturing a cow, slaughtering it, then proceeding to feast upon its decaying carcass. No haps! I must cook it. But, it seems more practical to eat a fruit or vegetable that doesn’t even need heat. Is it a coincidence that fruits and vegetables grow naturally and I do not have to harm a living soul to obtain my nutritional needs?

There’s been too many times that I can count when I ate so much meat that my stomach hurt. Actually it doesn’t take too much to cause the pain. My gastric acid doesn’t break down the animal flesh like it does natural foods. Carnivores have different stomach acids, that’s why they can eat fur, nails and other stuff that I wouldn’t. If I was wired to eat animals then why do I not have the same type of stomach acids as carnivorous animals?

Vegetarians live longer and are less prone to diseases. This is an example of cause and effect. Eat less meat, live longer and feel better. That really makes me question why I ever thought meat was the way to go.

Being a heavy meat-eater for the better part of my life and now living a vegan lifestyle, I feel better now. You truly are what you eat and eating soul-filled animals will have a detrimental effect on you. When the animal is stressed from their living conditions, you eat that stress. Whatever the animal feels, eats, and is exposed to, you assume it all. I am able to think clearer because I do not have those unwanted, external, non-organic feelings. Combine this holistic approach with meditation and other chakra opening practices, anyone can achieve enlightenment.

I made the choice for myself to eat the way that I do. It makes holistic sense and common sense. My mind, body and soul is alive so I must eat live, organic foods. No dead animal can nourish my holistic system. Why do I choose to live a vegan lifestyle? Because I choose life!

You Can Eat Meat While Losing Weight

Many people do not understand. Yes You can eat meat and lose weight. As a matter of fact we should eat some lean meat for regularly health and nutrition purposes. A healthy diet should include some lean meat for iron, protein and other nutritious reasons. The problem is in our society most meat is not lean and most people overeat. Too much of a good thing is not good at all. So the question is how much is too much? Better yet, how much lean meat can I eat and still lose weight?

Today we consider a healthy diet should be include at least 1500 calories for women and 1800 calories for men. At these levels most people would lose weight because the average woman consumes more that 2000 calories per day, while the average man is over 2500. To lose weight we simply need to burn more calories than we consume. The nutritional information on food packages assume the average diet is 2000 calories per day. If we are burning and or eliminating 2000 calories per day then we we should lose weight reduce our eating to 1500 to 1800 daily. That seems logical but is not always true.

What You Eat Counts

The question still remains, how much lean meat can I eat and still lose weight? When we decide to lose weight we do not just count calories. We need to evaluate content. The content of a healthy diet should include a balance of a variety of all necessary food groups including protein, carbohydrates and fats. We need all three groups. Sure there are good and bad of each group but, lean meat constitutes necessary protein without excess unnecessary fat. A balanced diet would be 60% to 70% fresh fruit and vegetables; 20% to 30% whole grains, nuts and beans. That leaves no more than 10% of our daily calories as lean meat. Now if we are trying to lose weight that means on a daily basis we should not have more than 180 to 200 calories of lean meat. The average cheeseburger at a fast food restaurant is between 400 and 800 calories. That means no Big Mac’s, Whoppers or Quarter Pounders with Cheese.

But there are a few reasons to avoid the fast foods while attempting to lose weight. First the meat is not lean. The meat typically comes from specially bred animals that are fattened and plumped up just for the fast food chain. The truth is few people prefer the meat of a lean cow versus a nice juicy plump one if they are looking at a picture or some form of advertisement. We have been brain washed to believe the fatter the better. The second reason to avoid fast food is because the bread and the secret sauces. They are so filled additives, sugar, corn syrup and corn starch as they add as many calories as the meat itself with no nutritional value. So not only is the meat not lean and the bread and sauces are so full of additives but the entire fast food, commercially processed, meals are detrimental to full of sugars, sodium and starches that causes numerous health problems.

If you noticed you can eat 150 to 200 calories of lean meat a day and still be able to lose weight. It is highly unlikely to get that from any fast food restaurant. You could get that at home. A small fresh cut of lean beef could be about 200 calories. Chicken and turkey could provide the same protein with far less calories. There is another important factor to consider, metabolism and muscle mass.

Increase Your Metabolism to Lose Weight

The reason men can have more and actually require more calories daily is they have more muscles. With greater muscle mass your metabolism is greater. The greater your metabolism the more calories you burn. In other words if you exercise regularly you increase your metabolism and burn calories. If you do resistance training you turn fat into muscles, burning the fat and burning calories. Muscles continue to burn calories while you are not even exercising. But to maintain muscles you must continue to use them or they convert to fat. This is a long way of saying if you exercise daily burning more calories you can eat a little more meat and still lose weight. Keep in mind, you lose weight by burning more calories than you consume.

So Just What Is Pulled Pork by Paul Yates

When I first started writing recipes for my web site I received a lot of questions about “pulled pork” and how best to prepare it. Living in the UK I’d never heard of pulled pork so it presented me with a great opportunity to do some exploring and further my barbecue education.

Pulling pork sounds like an extremely strenuous business but it’s not, it’s simply down to a gentle, slow cooking process that makes it ideal for the meat smoker although many a good pulled pork has been rustled up in a slow cooker or a traditional oven.

Pulled pork is so called because of the way that it is served up. As it says, it’s literally been pulled apart. Nowadays it can be served chopped or shredded (although traditionalist would probably shun this) but one thing remains true and that is the final presentation – in a bun with barbecue sauce and a coleslaw side.

Pork is a very traditional meat that’s been around a long time. In Europe for example, pigs have always been available because they eat anything and that makes them easy to rear particularly through the long harsh winters. In America it’s the pig or hog’s hardy nature that allowed it to survive in more extreme surroundings than cattle. It’s this fact that has made pork such a popular staple in the American South where the years ago the first settlers found that their cattle perished and the hogs happily thrived.

The pig is also popular because nearly every part of the animal can be eaten, even the skin, and let’s face it, who doesn’t like a nice piece of crackling?

Pork shoulder is the most commonly used joint because the long cooking could dry out some cuts but shoulder is quite a fatty joint therefore providing a natural baste. During the long cookout most of the fat will dissolve but most importantly it’s this long cooking process that breaks down the tough fibrous connective tissue called 19f1b87a4a76481ed8f500a3e3169d5b that tenderizes the meat so making it easy to “pull” apart.

Using a meat smoker for pulled pork does add a certain smoked flavour to the job that you’re not going to get from an oven but during this long cooking process (about 90 minutes per pound of meat) it’s sometimes difficult to keep the smoker going long enough at a stable temperature to finish cooking. It’s also arguable whether the smoker adds any more flavour after the first 5 hours and that’s why many folks will complete the second half of the cooking process wrapped tightly in foil in a conventional oven, especially when doing a large joint.

When the pork is finally done, it needs to rest for 60 minutes and then it should be ready for pulling apart and once pulled it can then be warmed a little if required. I find that the eating the pulled pork cold really highlights the smoked flavour but of course this is personal preference. The great thing I like about a pulled pork recipe is that in the end the flavour can vary so much simply by one’s choice of barbecue sauce yet to a traditionalist this is an endless source of debate. Long may these arguments continue!
